This creamy coconut tofu curry comes together with tofu, colorful vegetables, coconut milk, and a handful of pantry spices to make a flavorful, satisfying week night dinner.

Ingredients

For about 3–4 servings, you'll need:

  • 1 block firm or extra-firm tofu, pressed and cubed

  • 1 Tablespoon olive oil

  • 1 can (13.5 oz) coconut milk

  • ½–1 onion, diced

  • 1–2 bell peppers, sliced

  • 1 C peas

  • 2 teaspoons curry powder

  • 1 teaspoon garlic powder or 2–3 cloves fresh garlic

  • ½ teaspoon cumin

  • ¼ teaspoon turmeric

  • ½ teaspoon salt

  • 1–2 Tablespoons soy sauce

  • Black pepper, to taste

  • Optional: red pepper flakes for heat

  • Optional: lime juice for serving

Serve over rice.


Directions

1. Press and cook the tofu: Press tofu for 10 minutes then cut into cubes. Cook in olive oil over medium-high heat until golden on several sides. Remove the tofu from the pan and set aside.

2. Cook the vegetables: Add the onion to the pan and sauté until it begins to soften. Add the bell peppers and continue cooking for a few minutes.

3. Add the spices: Stir in the curry powder, garlic, cumin, and turmeric. Cook for about 30 seconds. This helps bring out the flavor of the spices.

4. Make the curry sauce: Pour in the coconut milk and add the soy sauce, salt, and black pepper. Stir and bring to a gentle simmer.

5. Add the tofu and peas: Return the tofu to the pan and simmer for several minutes. Add the peas toward the end so they stay bright and don't become overcooked. Taste and adjust the seasoning. If you'd like a stronger curry flavor, add another ½–1 teaspoon of curry powder.

6. Finish and serve: A squeeze of fresh lime juice adds a bright finish to the creamy curry. Serve over rice and enjoy!


Make It Your Own

One of the best things about a curry recipe is how adaptable it can be. You don't need to have the exact vegetables in the recipe to make a delicious meal.


Try using vegetables such as:
