Trail Mix Energy Bites

Ingredients

1 C old fashioned oatmeal

1/3 C raisins, chopped 

1/2 C natural peanut butter

1/2 C ground flaxseed

1/2 C semi sweet chocolate chips

1/3 C honey

1 Tbsp chia Seeds

1 tsp vanilla extract


Other Ingredient Ideas

Use almond butter instead of peanut butter

Swap raisins for coconut flakes

Swap chocolate chips and raisins for white chocolate and cranberries  


Directions 

  1. Add all ingredients to a large mixing bowl. Mix ingredients together.

  2. Cover bowl with lid or plastic wrap, sit in refrigerator for 1-2 hours to allow mix to chill.

  3.  Remove from fridge and form approx. 18 energy bites (about 1 in. diameter).  

  4. Enjoy right away, store in fridge for 1 week or in freezer for up to 3 months. 


Use this as a snack idea!

These can serve as a great snack, make a batch ahead of time and freeze. They need to thaw at least 10 minutes before eating them.

  • Pack a few of them to eat in the middle of the day for an energy boost.

  • Enjoy before engaging in physical activity as a quick snack, especially if it has been a few hours since you last ate.
