Kale & Sausage Soup

Ingredients

1/2 Tbsp olive oil 

1 lb ground sausage

1 large carrot, chopped 

2 celery stalks, chopped 

1 sweet onion, chopped  

2 medium sweet potato, cubed 

2-3 cloves of garlic, minced 

3-4 twigs of fresh thyme (or 1 tsp of dry thyme) 

Salt and pepper to taste 

1 bunch of kale, chopped (3-4 C or amount as desired) 

2 cans white beans, drained and rinsed 

4-6 C low sodium broth (chicken or vegetable) 

Grated parmesan cheese to serve 


Directions 

  1. In a large pot, add sausage over medium heat, stir occasionally. Once browned and cooked, remove from pot.

  2. Add carrot, celery, sweet onion, and sweet potato. Saute for 4-6 minutes and stir occasionally. Add garlic, fresh or dry thyme, salt and pepper, and cook for another 2-4 minutes. Add sausage back into pot. 

  3. Add kale, white beans and broth. Stir soup together. Bring soup to a boil on high heat, then bring to low heat to simmer for 10-20 minutes with the lid on. Check occasionally and stir. The longer it simmers, the more flavorful.

  4. Serve with grated parmesan cheese and red pepper flakes for a kick. 


Alternative ingredients

For sausage, use ground meat such as ground chicken, turkey or beef, or plant based sausage
