Week Night Stir Fry

Total prep & cook time 25-30 minutes





Ingredients 

1 Tbsp olive oil 

1 lb chicken breast, cubed 

1 bell pepper, chopped

1 sweet onion, chopped

1 head of broccoli, chopped 

1-2 cloves of garlic, minced

1/8 or 1/4 Stir fry sauce of choice 


Optional Toppings

Sesame seeds

Green onions, chopped

Hot sauce like sriracha 


Directions 

  1. Heat skillet over medium heat, add olive oil, allow to warm, then add cubed chicken. Stir occasionally, cook until well done, at 165 F. Remove chicken from skillet and set aside.

  2. Add bell pepper and onion, sauté until softened but still crispy, 3-5 minutes and stir occasionally. Then add broccoli and garlic and cook for another 3-5 minutes or until vegetables reach desired doneness. 

  3. Add chicken back in, add sauce of choice and stir everything together. 

  4. Serve stir fry over rice, noodle or other grain of choice and add desired toppings. 


Notes

  • Make rice, noodles or grain of choice to pair with the str fry for a balanced meal.

  • Make this recipe faster by buying pre-chopped vegetables.

  • Other vegetables to try: carrots, snap peas, zucchini, yellow squash, cabbage. 

  • This recipe uses Kikkoman Stir Fry sauce, use any brand or flavor desired. A lot of sauces are higher in sodium, be mindful of amount used when preparing this dish or opt for a lower sodium sauce if needed.
